Procedure
- 1 Add phase A ingredients and let it mix. Heat to 70°C.
- 2 Combine Phase B ingredients and heat to 70-75°C. Add Phase B to Phase A. Homogenize for 3 minutes.
- 3 Start cooling under propeller agitation.
- 4 Premix MAKIMOUSSE 12 with Glycerin and add it to the batch.
- 5 Cool the batch to 40°C and add Phase D ingredients individually. Mix well under propeller agitation until uniform.
