Procedure

1 Weigh Phase A in the main kettle. Begin propeller mixing. Adjust pH of kettle to 5.0-5.5 with ingredients listed in Phase G. Record amounts used.
2 Slowly sift Phase B int o main kettle, and propeller mix until completely dispersed.
3 Slowly sift Phase C into main kettle, and propeller mix until completely dispersed. If needed, briefly homogenize until uniform.
4 Add Phase D ingredients to the main kettle, one at a time, and propeller mix until uniform.
5 Pre-blend Phase E until uniform, then add t o main kettle and propeller mix until uniform.
6 Add Phase F ingredients to main kettle, one at a time, and propeller mix until uniform.
7 Adjust pH of batch with ingredients listed in Phase G. Record any amount added. Homogenize if necessary.
8 When batch is at room temperature and in spec , drop into appropriate containers.
