Procedure
- 1 Combine Phase A and heat to 75-80˚C.
- 2 Disperse Phase B, allow to hydrate, maintain temperature 75-80˚C.
- 3 Heat Phase C to 75-80˚C. Add Phase C to Phase A/B to emulsify.
- 4 Homogenize until smooth and uniform.
- 5 Cool to 35-40oC with mixing,
- 6 Add Phase D one ingredient at a time, mix until uniform.
- 7 Adjust pH of batch to 5.0-5.5 Cool batch.
