Procedure
- 1 Combine Phase A. Disperse Phase B, allow to hydrate until thick gel develops. Heat to 75°C.
- 2 Combine Phase C and heat to 75°C. Add slowly to batch to emulsify when both phases are at 75°C.
- 3 Cool batch until 40°C and add Phase D ingredients one at a time.
- 4 Cool batch to 30°C.
